Limonada de Coco (Frozen Coconut Limeade)

I’m just going to state the obvious here: it’s hot. Make that freakin’ hot. We’re in the sixth straight day of 90-degree weather. I’m sure anyone reading this in the Mid-West or the Western part of the county, where the temperature has been in the triple digits, is thinking that 90 degrees is actually cool weather.
Wherever you are this summer in the U.S., it’s just downright hot.
But just because it’s hot doesn’t mean we have to be miserable. Right? So take a break from sticking your head in the freezer to cool off and enjoy this delicious, tropical drink.
Lime and coconut go so well together here and after one sip you’ll already start to feel cooler. After your second sip you might even think you hear steel drums playing. On second thought, the steel drums you hear might be because you have a touch of heat stroke. Or it could be from the heavy pour of rum you decided to add to the coconut limeade. In which case, that makes you awesome.
I love coconut and wanted more of a coconut flavor than lime so instead of adding one cup of coconut milk I added the entire can. The lime flavor still came through nicely though and the flavors reminded me of key lime pie.
So cheers to getting through this heat and keeping cool. And cheers to six months from now when it will be winter, below freezing temperatures, and we’ll be wishing for hot summer days like these.
