Healing Coconut Turmeric Smoothie

Here’s a tongue twister: this is my most re-pinned pin on Pinterest. I get notifications daily that it’s been repinned multiple times. It’s funny to me because the original picture I saw with this recipe isn’t mouthwatering or sexy or mouthwateringly sexy. And it’s a smoothie. It’s not even a picture of the smoothie itself. Just a yellow backdrop with the list of ingredients. If it were a greasy burger or something sweet dripping with chocolate I’d get it.
So the picture wasn’t a huge seller for me (hopefully mine is a little better). But I have to ask myself, why did I pin it to begin with? The coconut! I tend to gravitate towards anything coconut. Also, at the time I remember hearing about how great and healthy turmeric is for you so I decided to give it a try.
The first time I made this was during what seemed like the gazillionth snow storm of last winter. That was when Boston got a record 108.6 inches of snow. We were probably at the 90-inch part of the winter when this particular snow storm came. When I went “end of the world” grocery shopping (again) I wanted to make something healthy because at that point of the winter I was getting oversaturated with the comfort & junk food my family and I were having. One lunch I had Lipton onion dip and chips. It was time to make a change. (But the chips & dip were a really delicious lunch!)
I’m so glad I made this. Not only did I feel good about having it, I felt like it was a tropical drink. It was almost like a gingery piña colada. And it made looking out the window at the endless snow a little less painful.
I made this recipe as is, except I didn’t add the chia seeds. I didn’t have any at the time, and as much as I wanted to get out of the house and go to Trader Joe’s for some, I couldn’t. We were snowed in.
I also used the Thai coconut milk in the can. That’s what I had on hand and what I like to use for Thai coconut curry (recipe coming real soon!).
But this smoothie is perfect for any season. And it makes you feel good. And the coconut! Love the coconut.
