Chocolate Chip Paleo Cookie Bars

If I had to choose between sweet or savory foods I would choose savory in a heartbeat. I’m the type of person that would rather get an appetizer for dessert instead of something sweet. But I’m not dead; I still like sweets. And sometimes my sweet tooth will call.
And the call can be pretty loud.
Have you ever noticed that some grocery stores place their produce section right next to the bakery? The one I go to on a regular basis is set up like that and it’s aggravating and genius at the same time. To get to the other departments I have no choice but to pass through the bakery. So I deal with it and purposely avoid going by the table that has buckets of cookies. The bucket of chocolate chip cookies is the main thing I avoid because it then gets in my head and all I want to do is have it.
My cart was filled with some beautiful tomatoes, a bouquet of basil, bright red peppers, and fragrant mint and cilantro. I think I was so enthralled I totally forgot my game of avoidance and found myself right next to the “Table of Temptation.” There they were: buckets on top of buckets of soft, yummy chocolate chip cookies. I decided to give in and get the cookies and when I reached for the bucket it was still a little warm. The cookies were just baked! And I probably had the goofiest look of happiness on my face. The chocolate chip cookies were now in my cart and it was a beautiful sight. But then without warning, the next image that crept in my head was Jennifer Lopez’s abs. Where did that come from? And why did J.Lo’s ab perfection have to pop into my head at that moment?
Then again, have you seen them? They are amazing and I have serious ab envy. And looking at the bucket of chocolate chip cookies in my cart I figured that I would continue to be envious if I didn’t put the bucket back.
So I did. But the craving for chocolate chip cookies was still strong.
Luckily, this recipe I found on Paleo Grubs saved me and gave me hope that I can one day achieve J.Lo’s ab greatness. (I’m almost there with my 2-pack!) The bars are made with almond flour and sweetened with maple syrup and dark chocolate chips. One bite and I didn’t feel like I was having a second-best type of cookie. It really did satisfy my chocolate chip cookie craving and it was delicious.
But to me the best part of making these chocolate chip cookie bars was making them with my youngest son, Will. He’s 11 and has been cooking with me for as long as I can remember. He loves to cook and bake and I love seeing him measure and mix the ingredients and put everything together. And I’m not just saying this because I’m his mother, but he’s really good at it!
So, if you’re looking to satisfy a sweet tooth craving, want ab-tastic J.Lo abs, and want to make something delicious with a great kid in your life, this recipe is for you.
- 2 1/2 cups almond flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp vanilla
- 2 large eggs
- 1 Tbsp almond milk
- 1/4 cup melted coconut oil
- 1/3 cup maple syrup
- 1/2 cup dark chocolate chips (a heaping 1/2 cup works just fine)
- Preheat oven to 350 degrees.
- Grease an 8x8 baking pan.
- In a large bowl, mix together the almond flour, baking soda, and salt.
- In a separate bowl, mix together the vanilla, eggs, almond milk, oil, and syrup.
- Add wet ingredients to the dry ingredients and stir well with a hand mixer.
- Fold in the chocolate chips with a spatula.
- Pour mixture into greased baking pan, smoothing out to even. Bake for approximately 18-20 minutes or until the top is golden brown and a toothpick inserted in the middle comes out clean.
- Let cookies cool for about 10-15 minutes before cutting.
